Brighton Short Breaks is delighted to have joined forces with Chandra Afrizal, a renowned international chef specialising in private and corporate catering, tailor made to client’s appetite.
Chandra trained with Jamie Oliver at the Riverside Café in 2001 – 2004 and was also a chef at London’s famous Nobu restaurant 2007 – 2008 specialising in sushi and Japanese food, before launching his own business, catering to the private market – offering 5 star food at a fraction of restaurant prices and providing a fantastic focal point for your weekend celebration.
Chandra can now offering his private catering expertise to both our Brighton and London properties and the price includes all the food and preparation, as well as staff to serve your party, and spirit it all away afterwards!
Wines can also be selected and provided as requested.
Chandra offers four distinctive offerings for clients staying in our properties – with the option for individual menus to be created on request.
• Sushi classes – Charged to client at £25 a head
• Finger food – Aimed at the arrival evening for the larger groups at £15 per head
• Indonesian Banquet – Charged to client at £25 a head
• Full Sunday roast / formal English style meal – Price to be discussed dependent on menu
INDONESIAN FINGER BUFFET £15 per head
Dipping , rolling and Sharing are what our starters and sides were made for . We make everything fresh in house!
A) SATAY CHICKEN Skewers of Chicken & SATAY KAMBING Skewers of lamb.
B) PREGEDEL JAGUNG. Typical street vendor dish, of fresh corn kernel. Combined with mashed potatoes and loads of mixed chopped herbs.
C) LUMPIA. Spring Rolls. Vegetable served with sweet chilli sauce.
D) PRAWN TEMPURA. Fried king prawn coated with spice and herby butter made with lesser galangal , lemon grass and lime leaves, served with sweet sambal chilli sauce.
All came with various and different sauce in the table.

Each guest is served 10 pieces of sushi and 10 pieces of nigiri and 6 pieces of sashimi and also served with miso soup and edemame beans – a banquet all prepared in front of your very eyes!
